JAGGERY IS BETTER
Nowadays there is no home without ‘gur’
or jaggery. Some people in the villages even today welcome guests with jaggery
and water instead of coffee or tea. Jaggery is thus made for direct consumption
though people of modern world rarely eat jaggery nowadays.
Preparation:
Jaggery
is concentrated product of cane juice without the removal of molasses and
crystals. Jaggery is available in two colours: dark brown and golden colour. It
contains sucrose 50% and 20% sugar, water 20% and remainder insoluble matter
like ash, proteins and bagasse.
Jaggery is healthier than sugar since
chemicals are not used in its preparation. Jaggery is able to retain minerals. Jaggery
is used in Ayurvedic medicines for curing throat and lung infections. It is not
introduced into the blood stream as quickly as sugar. Jaggery is rich in iron.
Jaggery is used in cooking to improve the
taste of soups. Some people consider jaggery to be auspicious and eat it before
starting important jobs.
Jaggery mixed with jeera powder is used
to cure indigestion.
